GULAB JAMUN RECIPE
Ingredients:
For Sugar Syrup:
2 cups Sugar (400g)
2 cups Water
1 1/2 tsp Lemon Juice
4-5 Green Cardamom Pods
For Gulab Jamun Dough:
2 cups Dry Whole Milk (200g)
1 tsp Baking Powder
4 tbsp All-Purpose Flour (45g)
1/4 tsp Green Cardamom Powder
2 tbsp Clarified Butter (Ghee)
1/2 cup + 2 tbsp Milk
For Frying:
Ghee or Vegetable Oil (for deep frying)
Instructions:
Step 1: Prepare Sugar Syrup: In a saucepan, combine sugar, water, lemon juice, and green cardamom pods. Bring to a boil, stirring until the sugar dissolves. Simmer for 5-7 minutes until it reaches a slightly sticky consistency. Remove cardamom pods and set aside.
Step 2: Prepare Gulab Jamun Dough In a mixing bowl, combine dry whole milk, baking powder, all-purpose flour, green cardamom powder, clarified butter (ghee), and milk. Knead the ingredients into a soft, smooth dough. Cover the dough and let it rest for 2-3 minutes.
Step 3: Shape and Fry the Gulab Jamun Balls: Divide the dough into small portions and gently roll them into smooth, crack-free balls. Heat ghee or vegetable oil in a pan over medium heat.
Before frying, test the oil by putting a small piece of dough. If it takes 15-20 seconds to float, the oil is ready.
Fry the balls until golden brown, maintaining a medium-low flame.
Remove and drain excess oil on a paper towel.
Step 4: Soak in Sugar Syrup Drop the fried balls into the warm sugar syrup. Let them soak for at least 1-2 hours, ensuring they absorb the syrup
