Grandma’s Sweet Potato Pie

Ingredients:

  • 1 (1 pound) sweet potato (about 2 medium)
  • ½ cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup evaporated milk (or whole milk for a lighter taste)
  • 2 large eggs
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
