Ingredients:
2 medium zucchinis, cut into fries
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper to taste
1 large egg, beaten
Instructions:
Set your air fryer to 400°F (200°C) and let it preheat.
In a shallow dish, combine the grated Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper. Mix well to ensure even seasoning.
Lightly season the zucchini fries with salt and pepper.
Dip each zucchini fry into the beaten egg, allowing any excess to drip off.
Then, dredge the zucchini in the Parmesan-breadcrumb mixture, pressing gently to ensure the coating adheres well.
Place the coated zucchini fries in a single layer in the air fryer basket. Avoid overcrowding to ensure even cooking; you may need to cook them in batches.
Air fry the zucchini fries for 10-12 minutes, flipping them halfway through the cooking time, until they are golden brown and crispy.
Once cooked, remove the zucchini fries from the air fryer and serve immediately with your favorite dipping sauce.
