Cracker Barrel Meatloaf
Ingredients:
– 2 eggs
– 2/3 cup milk
– 32 Ritz crackers, crushed
– 1/2 cup chopped onion
– 4 ounces shredded sharp cheddar cheese
– 1 teaspoon salt
– 2 pounds ground beef (lean)
Instructions:
1. Preheat your oven to 350°F (175°C).
2. In a large mixing bowl, beat the eggs and then stir in the milk.
3. Add the crushed Ritz crackers, chopped onion, shredded sharp cheddar cheese, and salt to the egg and milk mixture. Mix well until all ingredients are combined.
4. Add the ground beef to the mixture. Using your hands, gently combine the meat with the other ingredients until evenly distributed. Be careful not to overmix as it can make the meatloaf dense.
5. Shape the meat mixture into a loaf and place it in a lightly greased 9×5-inch loaf pan. Alternatively, you can shape it into a loaf and place it on a baking sheet lined with parchment paper.
6. Bake the meatloaf in the preheated oven for 1 hour to 1 hour and 15 minutes, or until it is cooked through and the internal temperature reaches 160°F (71°C).
7. Once cooked, remove the meatloaf from the oven and let it rest for a few minutes before slicing and serving.
8. Serve slices of meatloaf with your favorite sides such as mashed potatoes, green beans, or a salad.
