Introduction
This hearty and colorful casserole is the ultimate comfort food — flaky biscuits at the bottom, seasoned ground beef in the middle, and a rainbow of bell peppers, onions, and melted cheese on top. Perfect for family dinners, potlucks, or when you want something filling, flavorful, and baked in one dish. It’s easy, budget-friendly, and you can prep it ahead of time.
Ingredients
For the Base:
1 can (16.3 oz) refrigerated biscuit dough (8 count) — or homemade biscuits
1 tablespoon olive oil or butter (for greasing the baking dish)
For the Beef Layer:
1 lb (450 g) ground beef
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika (optional)
1 cup tomato sauce or salsa (for extra flavor)
For the Veggie Topping:
1 cup red bell pepper, diced
1 cup yellow bell pepper, diced
1 cup green bell pepper, diced
½ cup red onion, finely diced
For the Cheesy Finish:
2 cups shredded cheddar cheese (or a mix of cheddar & mozzarella)
Instructions
Preheat Oven Set your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with olive oil or butter.
Prepare the Biscuits Cut each biscuit into quarters. Arrange the pieces evenly in the greased baking dish — this will form the base of your casserole.
Cook the Beef In a skillet over medium heat, brown the ground beef until fully cooked (about 6–7 minutes). Drain any excess fat. Season with salt, pepper, garlic powder, onion powder, and smoked paprika. Stir in tomato sauce or salsa.
Layer the Casserole Spoon the beef mixture evenly over the biscuit pieces in the dish.
Add the Cheese Sprinkle shredded cheese over the beef layer.
Top with Veggies Evenly scatter the diced peppers and onions over the cheese.
Bake Place in the oven and bake uncovered for 25–30 minutes, until the biscuits are golden and cooked through, and the cheese is melted and bubbly.
Serve Let the casserole rest for 5 minutes before cutting into squares. Serve warm with a side salad, sour cream, or hot sauce.
Methods & Tips
Make it Spicy: Add diced jalapeños or a sprinkle of crushed red pepper.
Different Meats: Swap ground beef for ground turkey, chicken, or sausage.
Cheese Varieties: Use Monterey Jack, Pepper Jack, or a Mexican cheese blend.
Extra Moisture: Add a layer of sour cream or cream of mushroom soup between the beef and cheese for a creamier texture.
History
Casseroles like this became popular in mid-20th-century America as an easy, all-in-one meal. The use of refrigerated biscuit dough is a more modern twist that saves time while still delivering that comforting homemade feel.
