A complete detailed recipe

Introduction

This dish is the perfect combination of comfort and freshness. Tender chicken baked in a creamy, cheesy sauce with juicy cherry tomatoes and lightly roasted zucchini creates a complete one-pan dinner that looks beautiful and tastes even better. The vegetables soften and release their natural sweetness while the chicken absorbs the herbs, garlic, and cheese. It’s the kind of meal that feels rustic, Mediterranean, and hearty without being heavy.

It’s easy, fast to assemble, and ideal for weeknights or family dinners. Everything cooks together in the same baking dish, making cleanup simple.

Ingredients

For the Chicken

• 4 chicken thighs or 4 chicken breasts
• 2 tablespoons olive oil
• 1 teaspoon salt
• ½ teaspoon black pepper
• 1 teaspoon paprika
• 1 teaspoon dried Italian herbs (oregano, basil, thyme)
• 3 cloves garlic, minced

For the Vegetables

• 2 medium zucchinis, sliced into thick rounds
• 2 cups cherry tomatoes
• 1 tablespoon olive oil
• ½ teaspoon salt
• ½ teaspoon dried thyme or Italian seasoning

For the Cheese Topping

• 1 cup shredded mozzarella
• ½ cup shredded cheddar
• ¼ cup grated Parmesan
• Fresh parsley or basil for garnish

Instructions

Step 1: Prepare the Chicken

1. Preheat your oven to 200°C (400°F).
2. Pat the chicken dry with a paper towel.
3. Season with salt, pepper, paprika, Italian herbs, and minced garlic.
4. Drizzle with olive oil and rub the seasoning into the chicken.
5. Set aside while preparing vegetables.

Step 2: Prep the Vegetables

1. Slice the zucchini into thick, even rounds (not too thin, or they will turn mushy).
2. Add zucchini and cherry tomatoes to a bowl.
3. Drizzle with olive oil, salt, and thyme.
4. Toss gently to coat.

Step 3: Assemble the Baking Dish

1. Lightly oil a baking dish.
2. Place the chicken pieces inside, spacing them evenly.
3. Scatter the zucchini slices and cherry tomatoes all around the chicken.
4. Pour any leftover seasoning oil from the bowls over the top.

Step 4: Bake the Dish

1. Bake uncovered for 25 minutes.
2. Remove from the oven and sprinkle mozzarella, cheddar, and Parmesan over the chicken and veggies.
3. Return to the oven and bake for another 15–20 minutes, until the cheese melts, turns golden, and the chicken reaches 75°C (165°F) internal temperature.
4. If you want more browning, broil for 2–3 minutes at the end.

Step 5: Finish

1. Remove from the oven and let it rest for 5 minutes.
2. Sprinkle with fresh parsley or basil.
3. Serve warm with rice, pasta, potatoes, quinoa, bread, or enjoy it as a low-carb meal.
