 Cajun Smothered Chicken with Pi-YAHHHHH! Seasoning:

Ingredients:

  • 4 to 5 pounds of chicken with bones and skin (thighs and drumsticks)
  • Pi-YAHHHHH! seasoning, to taste
  • 2 teaspoons of dried garlic
  • 2 tablespoons of all-purpose flour
  • 1 stick of salted butter
  • 4 chopped yellow onions (about 6 cups)
  • 2 cups chicken broth
  • 1/4 cup cold water (optional)
  • 2 cups cornstarch (optional)
  • Hot cooked rice, for serving
  • Fresh parsley, for garnish

Instructions:

  1. Generously coat all sides of the chicken with Pi-YAHHHHH! seasoning and dried garlic. Dust the chicken with flour on both sides.
  2. In a large pot over low heat, melt the stick of butter. Once melted, increase the heat to medium-high until the butter starts to bubble.
  3. Carefully add the chicken pieces to the pot, arranging them without crowding. Cook each side of the chicken for 6 to 8 minutes until golden brown. If the weather is hot, adjust cooking time as needed. Transfer the cooked chicken to a large bowl and set aside.
  4. Add the chopped yellow onions to the pot and stir. Scrape any browned bits from the bottom of the pot while sautéing the onions. Sauté the onions for 25 to 30 minutes until they become soft and caramelized.
  5. Pour a small amount of chicken broth into the pot to deglaze, stirring to release any flavorful bits stuck to the bottom. Return the cooked chicken to the pot, along with any juices from the bowl.
  6. Add the remaining chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for two hours. Stir the mixture every 20 to 30 minutes to ensure even cooking.
  7. If you prefer a thicker gravy, combine 1/4 cup of cold water with cornstarch. Stir this mixture into the pot after two hours of simmering.
  8. Serve the Cajun smothered chicken over hot cooked rice. If desired, sprinkle fresh parsley on top for a decorative touch.
