This marinade has been passed around for decades among backyard grill masters and home cooks alike—earning its title: The Best Steak Marinade in Existence.

Ingredients

• 1/3 cup soy sauce (adds salty umami depth)
• 1/2 cup olive oil (richness + keeps steak moist)
• 1/3 cup fresh lemon juice (tenderizer + brightness)
• 1/4 cup Worcestershire sauce (savory complexity)
• 3 tablespoons balsamic vinegar (optional, for sweetness & tang)
• 2 tablespoons Dijon mustard (adds sharpness & binds flavors)
• 3 tablespoons brown sugar or honey (caramelization & balance)
• 4 cloves garlic, minced (robust flavor)
• 1 teaspoon black pepper (classic steak spice)
• 1 teaspoon onion powder
• 1 teaspoon smoked paprika (for subtle smokiness)
• 1/2 teaspoon crushed red pepper flakes (optional, for a kick)
• Fresh herbs (2 sprigs rosemary or thyme, optional but amazing)

(Makes enough marinade for 2–3 pounds of steak.)

Instructions

1. Whisk together marinade:
In a medium bowl, whisk all ingredients until fully combined. Taste and adjust—add more lemon juice for tang, honey for sweetness, or soy sauce for saltiness.
2. Prepare steak:
Place your chosen steaks (ribeye, sirloin, flank, skirt, or even filets) in a large resealable bag or shallow dish.
3. Marinate:
Pour marinade over steak, ensuring it’s fully coated. Seal bag (or cover dish) and refrigerate:

• Minimum: 2 hours
• Best: 6–12 hours
• Maximum: 24 hours (longer may make the meat too soft due to acid).

1. Cook steak:

• Remove from fridge 30 minutes before cooking (room temperature cooks more evenly).
• Grill, pan-sear, or broil to your preferred doneness. For best results:
  • Rare: 120–125°F
  • Medium rare: 130–135°F
  • Medium: 140–145°F
  • Medium well: 150–155°F
  • Well done: 160°F+

1. Rest & serve:
Let steak rest 5 minutes before slicing—this keeps the juices locked inside.
