Ingredients:
– 1 ½ pounds (680g) beef stew meat, cut into cubes
– 2 tablespoons olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 2 carrots, peeled and diced
– 2 potatoes, peeled and diced
– 2 celery stalks, diced
– 4 cups beef broth
– 1 cup red wine (optional)
– 2 tablespoons tomato paste
– 1 bay leaf
– 1 teaspoon dried thyme
– Salt and pepper to taste
– 4 bread bowls (round bread loaves with the top cut off and the inside hollowed out)
Instructions:
1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set it aside.
