  • Salt & pepper, to taste

Instructions

1. Cook the Beef & Build the Gravy

  1. Pat the beef dry and season generously with salt and pepper.
  2. Heat oil or butter in a heavy pot or Dutch oven. Brown the beef chunks on all sides (this creates flavor). Remove and set aside.
  3. In the same pot, add onion and cook until softened, about 5 minutes. Stir in garlic.
  4. Sprinkle in flour and cook for 1–2 minutes to remove the raw taste.
  5. Slowly whisk in beef broth until smooth. Add Worcestershire sauce, soy sauce (if using), thyme, paprika, and bay leaf.
