Baked Cauliflower Better Than Meat

Ingredients**

For the Cauliflower:

  • 2 large heads of cauliflower (about 3–4 lbs total), cut into florets
  • 3 tbsp olive oil (or melted coconut oil)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp dried oregano
  • ½ tsp chili flakes (optional, for heat)

For the Crispy Coating:

  • 1 ½ cups panko breadcrumbs (or regular breadcrumbs)
  • ½ cup nutritional yeast or finely grated parmesan (for savory umami)
  • 2 tbsp olive oil (to mix into breadcrumbs)

For the Sauce (optional but recommended):

  • ½ cup vegan mayo or Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions**

1. Prep the Oven & Cauliflower

  • Preheat your oven to 425°F (220°C).
  • Line two baking sheets with parchment paper.
  • Rinse and cut the cauliflower into medium-sized florets.
  • Pat dry with a kitchen towel (this helps it get crispy).

2. Season the Cauliflower

  • In a large mixing bowl, toss the cauliflower with olive oil, salt, pepper, paprika, garlic powder, onion powder, oregano, and chili flakes.
  • Make sure every floret is well-coated.

3. Add the Crunch

  • In a small bowl, combine breadcrumbs, nutritional yeast (or parmesan), and 2 tbsp olive oil.
  • Sprinkle the breadcrumb mix over the cauliflower and toss gently to coat. Press it lightly onto the florets to help it stick.

4. Bake Until Crispy

  • Spread the cauliflower florets in a single layer on the baking sheets (don’t crowd them!).
  • Bake for 35–40 minutes, flipping halfway through, until golden, crispy, and slightly charred at the edges.

5. Make the Sauce (Optional)

  • In a small bowl, whisk together the mayo/yogurt, mustard, lemon juice, garlic, salt, and pepper.
  • Serve on the side for dipping or drizzle on top.

Serving Suggestions**

  • Serve with rice, quinoa, or roasted potatoes.
  • Add to wraps, grain bowls, or tacos.
  • Sprinkle fresh parsley or cilantro on top before serving.
  • Great hot or room temp—perfect for leftovers!
