Baked Apple Fritters

Introduction

Apple fritters are a classic American bakery treat, traditionally fried and glazed. This baked version keeps all the flavor—juicy apples, warm spices, and sweet glaze—without the heavy oil. Think of them as the perfect cross between apple pie and doughnuts, but healthier and oven-friendly.

Ingredients

For the Fritters:

  • 2 medium apples (Granny Smith, Honeycrisp, or Fuji), peeled, cored, and diced
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ cup granulated sugar
  • 2 large eggs
  • ½ cup whole milk (or buttermilk for tanginess)
  • ⅓ cup unsalted butter, melted (or neutral oil)
  • 2 tsp vanilla extract
  • 2 tbsp brown sugar (to caramelize the apples)

For the Glaze:

  • 1 cup powdered sugar
  • 2–3 tbsp milk (or apple cider for extra flavor)
  • ½ tsp vanilla extract

Instructions

Step 1: Prepare the Apples

  1. In a skillet over medium heat, melt 1 tbsp butter.
  2. Add diced apples, brown sugar, and a pinch of cinnamon.
  3. Cook for 5 minutes until apples soften slightly and get caramelized. Remove from heat and cool.

Step 2: Make the Batter

  1. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and sugar.
  2. In another bowl, whisk eggs, milk, melted butter, and vanilla.
  3. Pour wet mixture into dry ingredients, stirring just until combined (do not overmix).
  4. Fold in the cooled caramelized apples.

Step 3: Shape and Bake

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Scoop batter into small mounds (about ¼ cup each) onto the sheet, leaving space between fritters.
  3. Gently flatten each mound with the back of a spoon.
  4. Bake for 15–18 minutes, or until golden brown and set.

Step 4: Glaze

  1. Whisk powdered sugar, milk, and vanilla until smooth.
  2. Once fritters cool slightly, drizzle glaze over them. Let it set for 5 minutes before serving.

Methods & Tips

  • Healthier swap → Use whole wheat flour or almond flour for extra fiber.
  • Extra flavor → Add ¼ cup raisins or chopped pecans to the batter.
  • Glaze variations → Try maple glaze (powdered sugar + maple syrup) or cinnamon glaze.
  • Storage → Store in an airtight container for up to 3 days, or freeze for 1 month. Reheat in oven before serving.
