Authentic Hungarian Goulash

Authentic Hungarian Goulash

Ingredients:

  • 2 large onions
  • 2 teaspoons of butter or lard
  • 1 teaspoon caraway seeds
  • 2 tablespoons paprika
  • 1/4 cup wheat flour
  • 1 pound stewing beef, cut into 1-inch cubes and trimmed
  • 2 cups water or beef broth
  • 1 cup diced canned tomatoes
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Optional: 1/2 cup diced carrots
  • Optional: 3 cups diced potatoes

Instructions:

  1. In a large pot, melt the butter or lard over medium heat. Add the onions and cook until they become translucent.
  2. Stir in the caraway seeds and paprika, ensuring they are well mixed with the onions.
  3. In a bowl, coat the cubed stewing beef with wheat flour, shaking off any excess.
  4. Add the floured beef to the onions in the pot. Sauté for about 2 to 3 minutes, allowing the meat to brown slightly.
  5. Slowly pour about 1/4 cup of the beef broth into the pot, stirring to deglaze the bottom and release any browned bits.
  6. Add the remaining beef broth, diced tomatoes, and if desired, diced potatoes and carrots.
  7. Season the mixture with salt and pepper, stirring to combine all the ingredients.
  8. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the goulash simmer for about 1 1/2 to 2 hours, or until the beef is tender and the vegetables are soft.
  9. Stir the goulash occasionally to prevent sticking and ensure even cooking.
  10. Once the goulash is cooked to your desired tenderness, adjust the seasoning if needed.
  11. Serve the Hungarian goulash hot, and enjoy the rich flavors and hearty goodness of this traditional dish.
