Ingredients:

  • 1 and 3/4 cups (220g) all-purpose flour
  • 1 and 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (115g) unsalted butter, softened to room temperature
  • 1 cup (200g) granulated sugar
  • 3 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1/2 cup (120ml) whole milk

Instructions:

  1. Preheat your oven to 350°F (180°C). Grease and flour an 8-inch (20cm) round cake pan, or line it with parchment paper for easier removal.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, using an electric mixer or a stand mixer fitted with the paddle attachment, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
  4. Add the eggs, one at a time, mixing well after each addition. Then, mix in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  6. Pour the batter into the prepared cake pan and spread it evenly.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer the cake to a wire rack to cool completely
