  • 2 ripe avocados, diced
  • 4 hard-boiled eggs, chopped
  • 4 cups fresh spinach, chopped
  • 1/2 red onion, finely chopped
  • 1 cucumber, diced
  • Juice of 1 lemon
  • 1 tablespoon honey or maple syrup (optional)
  • 2 tablespoons extra virgin olive oil
