Vanilla Cake

Vanilla Cake

4 large eggs
1 cup white sugar
1¾ cup flour
¾ cup milk
¼ tsp salt
1 tsp vanilla essence
½ cup oil
½ tbs baking powder (7,5mls)

  1. Preheat oven @160°C
  2. In a seperate bowl sift in flour and baking powder
  3. In another bowl add eggs, salt, vanilla, sugar and whip on high speed until very fluffy, thick, pale in colour and voluminous about 6 to 8 minutes.
  4. Reduce mixer to low and add oil, mix
  5. With mixer still on low add milk
  6. Sift in the flour and baking powder mixture, mix on low until just combined. Finish mixing with a spatula, gently folding , mixing from the bottom of the bowl.
  7. Divide the batter equally in 2, 8 inch pans
  8. Tap the pans 3 times to remove air bubbles before baking
    Bake in a preheated oven for about 30 to 33minutes.

NOTE: Step 3 is very important. Sponge cakes get all their volume from eggs so do it well.
