FRIED POTATOES AND ONIONS

  • 1½ pounds russet potatoes, diced into 1/2″ cubes
  • 1 pound smoked sausage, sliced
  • 2 tablespoons olive oil
  • ½ teaspoon seasoned salt
  • ½ teaspoon Italian seasoning
  • ½ large red bell pepper, sliced
  • ½ large green bell pepper, sliced
  • 1 small onion, diced
  • Black pepper to taste
  • Shredded parmesan cheese for garnish
  • 1 tablespoon butter (for sautéing onions)

Directions:

  1. In a large pan, melt 1 tablespoon of butter over medium heat. Add the diced onion and sauté until translucent and soft. Once done, remove the onions from the pan and set aside.
  2. In the same large pan, heat 1 tablespoon of olive oil over medium-high heat. Add the diced potatoes, seasoned salt, Italian seasoning, and black pepper to taste. Stir to coat the potatoes evenly with the seasoning.
  3. Cover the skillet and let the potatoes cook for about 15 minutes, stirring occasionally, until they start to soften.

  6. While the potatoes and sausage are cooking, in a separate skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the sliced red and green bell peppers to the skillet and sauté until they are soft but still crisp.
