Ingredients:

  • 2 T-Bone steaks (1-1.5 inches thick)
  • Salt and black pepper, to taste
  • Olive oil or vegetable oil
  • Optional: Garlic powder, rosemary, or thyme for extra flavor

Instructions:

Preparing the Steak:

  1. Bring the Steak to Room Temperature:
    • Take the T-Bone steaks out of the refrigerator at least 30-60 minutes before cooking to allow them to come to room temperature.
  2. Preheat the Oven:
    • Preheat your oven to a low temperature, around 275°F (135°C).
  3. Season the Steaks:
    • Generously season both sides of each steak with salt and black pepper. Optionally, add garlic powder, rosemary, or thyme for additional flavor.

Reverse Searing:

  1. Preheat the Pan:
    • Heat a cast-iron skillet or oven-safe pan over medium-high heat. Add a small amount of olive oil or vegetable oil.
  2. Sear the Steaks:
    • Sear the T-Bone steaks on each side for 1-2 minutes or until a beautiful crust forms. Make sure to sear the edges as well.
  3. Transfer to the Oven:
    • Place the pan with the seared steaks in the preheated oven. Cook until the internal temperature reaches your desired level of doneness. For medium-rare, aim for around 130-135°F (54-57°C).
  4. Use a Meat Thermometer:
    • Monitor the internal temperature using a meat thermometer to achieve the perfect doneness. Insert the thermometer into the thickest part of the steak without touching the bone.
  5. Rest the Steaks:
    • Once the steaks reach the desired temperature, remove them from the oven and let them rest on a cutting board for 10 minutes. This allows the juices to redistribute and ensures a juicy steak.
  6. Slice and Serve:
    • Slice the T-Bone steaks against the bone, separating the strip steak and tenderloin. Arrange the slices on a platter and serve immediately.

Serving Suggestions:

  1. Pairing Options:
    • Serve the Reverse Seared T-Bone Steak with your favorite sides, such as garlic mashed potatoes, roasted vegetables, or a crisp green salad.
  2. Garnish and Enjoy:
    • Garnish the steak slices with a sprinkle of sea salt or a drizzle of olive oil. Enjoy the succulent and flavorful masterpiece you’ve created
