Ingredients:
8 ripe peaches – peeled and sliced thinly.
1/4 cup granulated sugar.
1/4 cup brown sugar.
1/4 teaspoon cinnamon powder.
1/8 teaspoon nutmeg powder.
1 teaspoon freshly squeezed lemon juice.
Two teaspoons cornstarch.
1 cup (0.24 l) (0.24 l) (0.24 l) of all-purpose flour.
1/4 cup of granulated sugar.
1/4 cup of brown sugar.
1 teaspoon of baking powder.
1/2 teaspoon salt.
6 tablespoons of cold unsalted butter (small cubes).
1/4 cup boiling water.
Combine:
3 tablespoons granulated sugar.
1 teaspoon of cinnamon powder.
Directions:
Step 1
First, preheat the oven to 425 °F (ca. 218 °C).
Step 2
In a roomy bowl, mix together the thinly sliced peaches, 1/4 cup of granulated sugar, 1/4 cup of brown sugar, 1/4 teaspoon of cinnamon, freshly squeezed lemon juice, nutmeg, and cornstarch.
Step 3
Then, stir the mixture thoroughly to ensure even coating, transfer it into a 2-quart baking dish, and put the dish into the preheated oven and bake for 10 minutes.
Step 4
While the peaches are baking, take a large bowl and mix together the flour, 1/4 cup granulated sugar, 1/4 cup brown sugar, baking powder, and salt.
Step 5
Next, blend the butter into the dry mixture using your fingertips or a pastry blender until the texture resembles coarse crumbs. Gradually add water and mix until the dough comes together uniformly.
Step 6
Then, take the peach-filled baking dish out of the oven and carefully pour the prepared filling over the peaches. Evenly sprinkle the sugar-cinnamon mixture all across the cobbler.
Step 7
Finally, bake until the topping turns a beautiful golden brown, which should take approximately 30 minutes.
